To go back to the original question....

Generally, in my experience, people need 5 or 6 different things, maybe
just the usual, web surf, watch things online, email. I've found that
Lubuntu has worked well for me with these people, mostly because of the
underpowered machines. I don't know how well or badly Mint works with
lower end machines, otherwise, that's probaby the one I'd recommend.
Netflix and Skype are fairly easy to set up on Lubuntu in my experience,
and the user can usually find the other things they need through the menu.

Note that this is just my experience, and only with a couple of people.
