80G is lots of disk storage for Linux
1G Might be a little tight eventually, but it is probably DDR2 and it never got cheap.
3G processor is darn fast!
I started with a Raspberry Pi and have added a similar ASUS/AMD system. To stay in the PI family I am using Debian Wheezy(currrent distro).
You have a lot of choices with Debian (and most other distros), I am currently using LXDE (I think) and UltraVNC as a remote connection. Many Distros are based on Debian including Ubuntu. You can do it all from Debian or you can strip it down to whatever constraints you want. Of course, Ubuntu is one of those choices.
At some time the IDE Hard drives might get scarce but you likely have a very good Linux computer.
