Just an update I'm on that machine now and having a look at /boot:
3 directories, 228 files
So it isn't hundreds of directories but actually files in it. /boot/grub is:
1 directory, 220 files
I guess the one other time I'd looked at it my brain recoiled in disgust so I misremembered the exact composition of the mess. I still think it is totally over the top for booting a machine up compared to what I am used to.
